Why add hops to sour cherries?
Xanthohumol – a prenylated flavonoid found in hop cones – inhibits NF-κB, a central regulator of inflammatory signaling in the body. This is a different molecular target from the COX enzymes affected by anthocyanins.
That is the key advantage of combining them.
When two ingredients target inflammation through different signaling pathways, their combined effect is broader and potentially stronger than either one alone. The body has fewer opportunities to compensate for the inhibition of one pathway by increasing the activity of another.
